How's that sound? Good? Great! Here's the details behind this frozen sweet creation: The kind folks over at Skoop sent me a big package of some of their best plant-based protein powders. For this pie, I wanted to boost it's vitamin and protein power and thus, used the B-Strong Skoop.
Bearing all that in mind, I highly recommend you try out this B-Strong Protein Powder because it is by far the best protein powder I have ever tasted! B-Strong Protein Powder:
The B-Strong Protein Powder, along with all the other lines of Skoop Protein Powders can easily be incorporated in smoothies, oatmeals, baked goods, and, of course, pie Peppermint Chocolate Chip Protein PieServes: 1 pie (8 servings) Ingredients: 1 reduced fat graham cracker pie crust 2 1/2 cups vanilla Greek yogurt (I used Great Value brand) 2 Tbsp. Skoop B-Strong Protein Powder (or other vanilla or plain flavor protein powder) 2 Tbsp. sugar-free, fat-free vanilla pudding mix 2 Tbsp. sugar-free, fat-free cheesecake pudding mix 1/2 tsp. NuNaturals Peppermint NuStevia Liquid OR peppermint extract * green food coloring whipped topping (I used Cool Whip) 1 heaping Tbsp. mini choc. chips 2 Tbsp. Andes mint chocolate squares (approx. 7 squares; chopped into small pieces) *Note: if you use the peppermint extract, I recommend adding a bit of stevia or sweetener of choice to the mix as well. Depends how sweet you want the pie. Spread the pretty, green yogurt mixture into the pie crust. Top with Cool Whip or your desired whipped topping. Sprinkle mini chocolate chips and chopped Andes mint chocolate pieces on top of pie. Or you could even go the extra mile and top it with some Girl Scout Thin Mint cookies....Yum! Store in freezer. Serve cold, either straight from the freezer or slightly thawed. It's up to you! I prefer it slightly thawed. What's your favorite type of pie?

Free art classes at Crystal Bridges Museum A couple weeks ago, I randomly stumbled upon the calender on the Crystal Bridges Museum website that lists all the classes they offer through the month. Crystal Bridges is a pretty famous, up-and-coming local art museum in Northwest Arkansas. While searching through the classes on the calender, one in particular stood out to me: Wooden-puzzle board painting. I LOVE jigsaw puzzles. So when I saw this free class, I didn't know many details but my mother and I happened to have some spare time on the Sunday they were offering the class so we thought, "Hey, why not check it out?". So glad we did! Check out our wooden puzzle board art creations we each painted. Mine is on the top, my mother's is the flower. Yes, it might have been a class actually designed for elementary school-aged children, but it was FREE FUN and we both enjoyed it. Brown Rice Sweet Potato and Sea Salt Triscuits I have been dying to try these wonderful creations for quite some time. They lived up to my expectations. The sea salt flavor hits your tongue first and then you're introduced to the savory sweetness of the sweet potato flavor. Magic in a Triscuit. Check 'em out. No more Bae!!! This word is often used as a term of endearment from one loving partner to another. I have NEVER liked this word ever since I first heard it and have known of it's existence. I find it to be annoying and not at all endearing or sweet. Now I have another reason to back up my dislike. Guardians of the Galaxy I HIGHLY recommend you go check this movie out at your nearest theater if you haven't already. Usually I'm not a huge fan of the "superhero" genre of movies, but this one blew me away. My favorite part?...It had many hilairous moments that had me laughing out loud. Then I recently found this picture that references Guardians of the Galaxy and the classic children's book, The Giving Tree. If you get this joke, you're awesome. Peppermint Chocolate Chip Protein Pie I've been needing to experiment with my new Skoop protein powder and finally found the perfect way to do it: add it to a pie! Okay, maybe I was just looking for an excuse to make a pie--my favorite dessert. Either way, THIS pie is a great experiment and I can't wait to share the recipe with you guys tomorrow. It's easy to make, refreshing, tasty, AND you better believe it's healthy too. I need some more good cracker and chip recommendations!
