When I knew the super bowl was coming up, I wanted to make sure to find some good game food to make. Anytime there's any sort of holiday or celebration I swear I just use it as an excuse to make a food especially for the occasion. By the way, this year for the super bowl I was cheering for the Seahawks. Mostly because they had 3 former Arkansas Razorback players on their team and they had never won a super bowl before. What can I say? I like to pick the underdog. And, boy, was I pleasantly surprised with that game! Woot! Go Seahawks!
Admit it: the Broncos just did not show up to play. Sorry Peyton. He just looked so dang frustrated...
Baked Pickle Chips
40 pickle chips
3/4 cup Panko bread crumbs
1/4 cup flaxseed
2 Tbsp. whole-wheat flour
2 egg whites, lightly beaten
Dry the pickle chips off pretty well. Preheat oven to 375 degrees. Put the breadcrumb and flaxseed blend in one bowl. Place the egg whites and flour in two seperate bowls as well.
Dip a pickle in flour and shake off any excess. Then dip pickle in the egg whites, again shaking off any excess. Then flip the pickle around in the breadcrumb mixture until it is well coated. Place on a cookie sheet sprayed lightly with cooking spray. Continue with rest of pickle chips.
Bake pickle chips for 16 minutes, flipping the once halfway through.
Healthy Recipe Tidbits
- I swapped the all-purpose flour for whole-wheat flour, but you could certainly use any type of flour. The whole-wheat flour adds more beneficial nutrients than the all-purpose.
- Adding Flaxseed with the Panko breadcrumbs is another tweak I made to the original recipe because flaxseed is super good for you and it already has a naturally toasted flavor. Flaxseed is a great source of omega-3's, antioxidants, and fiber and has many other health benefits.
- If you can find low-sodium pickle chips that would be even better--especially those concerned with heart health.
